Clovelly and Oakleaf.
Pale straw with lime green edges. Green-apples, ripe kiwi fruit and white flowers. Perfumed green winter melon, full palated almost oily wine with an undertow of green asparagus.
Grapes were harvested early morning between 21 - 23° Balling. After hand sorting the grapes, skin contact was allowed at 10°C. The grapes were gently pressed and only free run juice was used to settle overnight. Fermentation took place in stainless steel tanks at controlled temperature of 12.5°C. The wine spent 5 months on its lees before bottling at the end of July 2012.
WHEN TO DRINK
Enjoy with butter roasted free-range chicken with seasoned goats cheese under the skin, batter dipped SASSI-friendly fish nuggets with anchovy mayonnaise.
