VINEYARD AND CLIMATE CONDITIONS:
Trellised, 40-year-old Chenin Blanc vines planted on south-western slopes of Bottelary Hills yielded the grapes for this wine. The vineyards received supplementary drip irrigation and produced 3 tons per hectare.
Temperature: Winter 6/14°C; Summer 16/28°C
Annual rainfall: 600 mm
Proximity to ocean: 20 km

WINEMAKING:
Chenin Blanc grapes were hand-harvested early morning at 38 °B. After 14 hours skin contact at 10°C, the grapes were gently pressed. Fermentation took place in stainless steel tanks at 16°C. After fermentation the wine matured for 36 months in French oak barrels.

Alc: 10.67% TA: 8.1 g/L
RS: 173.3 g/L pH: 3.71

APPEARANCE:
Yellow with hints of gold

TASTING NOTE:
Rich bouquet of dried apricot and honey with hints of lime aromas on the nose. The sweet round palate rewards with waves of flavours and a zesty aftertaste.

SERVE WITH:
Chilled as a dessert or with a crème brûlée, crêpes suzette or a gourmet cheese platter.
